Amazing Lamb’s Quarter Saute Recipes – Lamb’s Quarter Saute. You may recognize the common “weed”. If not, you’ll recognize the leaves from the plant once you come across the leaves! It can be found everywhere however; it appears to be a fan of the fertile soil in gardens.

It’s one of the few weeds I’m looking forward to seeing and will to eat! Lamb’s Quarter is a very mild green I personally like over spinach. The nutritional content is a notch higher than the spinach of most regions. It’s extremely rich in vitamin C, riboflavin folate, vitamin A, potassium, magnesium, and many other nutrients.

 It is not only abundant and nutritious and readily available, but it’s delicious! This is a dish that my mother-in-law has cooked since forever. My husband was raised with the dish at home in South Africa where Lamb’s Quarter is available. My parents taught me to cook this dish, and today we are eagerly awaiting it every spring! 

  • 2 2. potatoes thinly sliced 2 c. thinly sliced potatoes
  • 1/2 1 c. chopped onions
  • 10 C. tightly packed Lamb’s Quarter
  • 2 TBLSP butter
  • 1/2 tsp pepper
  • 1/2 C. water

Salt to taste 

Clean and wash the tops and leaves of the tender lamb’s quarter (be certain that the area you’re harvesting them is not contaminated by sprays or chemical fertilizers). Combine all the ingredients into a skillet in the order indicated. Cover and cook on medium. to low heat for 15 -20 minutes, or until the potatoes are soft. Mix it up frequently, adding more liquid as needed. Serve it hot for any meal!

INGREDIENTS 

  • 2 2. thinly sliced potatoes
  • 1/2 1 c. chopped onions
  • 10 C. well packed Lamb’s Quarter
  • 2 tablespoons butter
  • 1/2 tsp pepper
  • 1/2 C. water
  • salt according to your taste

INSTRUCTIONS 

Clean and rinse the tops and leaves of the tender and young lamb’s quarters. Combine all the ingredients into a skillet according to the order indicated. Cover and cook on medium. to low heat for 15 -20 minutes, or up until the potatoes are soft. Mix it up frequently, and make sure you add more liquid as required. Serve hot for any meal!

NOTES 

You must ensure that the place you’re collecting the Lamb’s Quarter has not been poisoned with Chemical fertilizers, sprays, or chemical fertilizers.
