INGREDIENTS FOR THE LENTILS:
- 1 Tbsp. Olive oil 1 Tbsp. olive oil
- Two cloves minced garlic QP324
- One onion, yellow, and diced QP018
- Two medium carrots chopped QP165
- One cup brown lentils that are uncooked and uncooked BE025
- 2 Tbsp. curry powder hot or mild
- Sea Salt to taste BP066

One egg DP145 per person
Sort and wash the lentils, removing any stones or other debris. It’s easier to do this with a baking sheet. Three cups of water and even boil in a saucepan and then add the lentils. Let the pot return to a boil, and then reduce the heat and place a lid over the top, and let it simmer for 20 mins at least until lentils have become tender. Remove the cooked lentils from the pot and put them aside.
In the same pan in the same pot, sauté the onion as well as the garlic and carrots in olive oil at a medium-low temperature until the onions become clear (about five minutes). Then add the curry powder, and cook until aromatic. Stir in the lentils and allow until heated through. Add salt as required.
When lentils are cooked, fry an egg for each person, keep the egg yolk soft, and then place it on the lentils. Sprinkle with fresh herbs you like.
