INGREDIENTS
6 large apple varieties (I am a fan of the Honey Crisp (QP809) as well as Granny Smith (QP808) apples, but any apple will work. )
- 1 2 lbs ground beef
- 1/4 C extra-virgin olive oil
- 1 onion yellow chopped
- Pinch ground nutmeg
- Ground cinnamon can be puffed up
- Ground cumin that you pinch
- Pinch the ground coriander
- Sea salt (BP066) and black pepper (HS604) to taste
- A handful of walnuts cut into pieces
- Handful raisins
- Golden raisins in a handful
- Fresh herbs in a sprinkling, like parsley and mint

Preheat the oven to 400 degrees Fahrenheit.
With a pair blade or an apple corer cut off the core of the apple without making a hole in the inside in the fruit. Cut the apples into halves and scoop out the insides. Save the apple pieces to be added in the stuffing.
In the olive oil and oven, add onions and cook on moderate heat until the onions are tender and translucent. Then add the beef, and cook until the meat is brown. Then add the apple pieces you reserved and then season with cinnamon, nutmeg, and salt and pepper according to your preference.
Take the pan off the stove and then include the raisins and walnuts to the meat mixture. Stir thoroughly to mix. It is possible to add a bit of additional olive oil to the mixture of meat.
Split the mixture of meat among each apple in half and then place it on top of a big covered baking dish with a rim. Bake for 30 to 45 minutes until the apples are tender. Remove from oven and garnish with fresh herbs, and serve hot immediately.
