BRAZIL NUT COCONUT COOKIES 

Ingredients:

  • 1 cup butter
  • 1 cup of coconut sugar
  • Two eggs
  • 1 1/2 tsp vanilla extract
  • 2 1/4 cup pastry flour
  • 1/4 teaspoon salt
  • 1/2 tsp baking soda
  • 2 cups chopped Brazil Nuts
  • 1/2 cup of unsweetened coconut chips finely chopped

1/2 cup semi-sweet chocolate chips

Directions:

Mix the baking soda, flour, salt and baking soda in a bowl, then put aside. in a bowl large enough, mix sugar and butter until fluffy. Add eggs one at one time, mixing thoroughly with each addition. Beat in vanilla. Gradually add the flour mixture to the creamed mixture and mix it well. Add coconut and nuts. Roll balls of the size of a golf ball and then gently flatten. Set them on a parchment-lined baking sheet. Bake at 350 degrees for 10-12 minutes, or until the cookie’s bottom is slightly browned.

Let the cookies cool. 

Chocolate chips are melted in the double broiler. Dip the cookies that have cooled into the chocolate, and drizzle it on the cookies that have cooled.
