INGREDIENTS – FOR THE CRUST

- 1 cup sharp cheddar cheese shredded
- 6 tbsp ice-water
FOR THE FILLING
- 1 1/2 cups chopped apples
- 1 cup of coconut sugar
- 2 1 tbsp pastry powder
- 1 tsp of cinnamon
- 1 tsp vanilla
Preheat the oven to 425°F. Prepare a muffin pan of standard size using a greased cup. put them aside.
PREPARE THE CRUST
In a large bowl combine the salt and flour in a large bowl. Cut the butter. Add the cheese shredded until it is well mixed.
Add 1 tbsp cold water at one time, slowly work the dough till the dough is dampened. Once the dough has formed into a ball, place it onto a floured surface. Divide in two pieces. Let them rest in the fridge while you make the filling.
PREPARE THE FILLING
Mix the apples with cinnamon, coconut sugar and vanilla along with 2 tablespoons of the flour into a medium bowl. Set aside.
