With a juicer, squeeze enough watermelon to make 4 cups. If the watermelon has no seeds and you want to puree it, you can do so in a blender instead.

Put 1 cup of watermelon juice inside a small saucepan along with the gelatin. Whisk over medium heat until dissolved.

Remove from the heat and mix into honey, lemon juice, and the remaining watermelon juice. Then, let it cool in the fridge for several hours or until set.

Whip the cream until it is smooth. Add vanilla.
